Cowboy Salad
Short description
This salad is tasty, colorful, and can be put together in less than 15 minutes.

1 (15 oz.) can black-eyed peas or black beans, drained
½ (15-oz.) can corn, drained
½ bunch of cilantro, chopped
3 green onions, chopped
3 medium tomatoes, chopped
½ tablespoon oil (canola or vegetable)
1 tablespoon vinegar or lime juice
¼ teaspoon salt
¼ teaspoon pepper
*Optional: 1 avocado, chopped

  1. Drain and rinse the black-eyed peas (or black beans) and corn. Combine all ingredients in a large bowl.
  2. Add cilantro, green onions, and tomatoes to the bowl and stir.
  3. Mix oil, vinegar or lime juice, salt, and pepper in a small bowl.
  4. Pour oil mixture over salad ingredients and toss lightly. Top with avocado*, if desired.
  5. Put leftovers in your refrigerator within 2 hours.
