Black Bean & Eggplant Chili

Black Bean & Eggplant Chili

This chili is a great source of fiber – and it’s vegetarian, too!

Ingredients: 

1 cup fresh eggplant cut into cubes
1 can beans
1 can diced tomatoes (14.5 oz.) or 2 fresh medium diced tomatoes
½ cup chopped onions
1 can (4 oz.) of diced green chiles
2 teaspoons paprika
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon olive oil
1 cup of water
2  teaspoon garlic powder
*Optional dash of chili flakes

Directions: 

  1.  In a saucepan, cook onions in olive oil for 5 minutes.
  2.  Add eggplant, tomatoes, beans, green chiles, spices and water.
  3.  Simmer for 15 minutes.
  4.  For extra spice, top with chili flakes.* Enjoy!
